Red velvet protein balls

Indulge in these delicious high-protein red velvet protein balls. These protein balls are the perfect snack for Valentine’s Day. These protein balls can be kept in the fridge for 1 week.

Ingredients:

  • 2 scoops of my protein unflavoured whey protein powder
  • 60g oat flour (blend oats into flour)
  • 55g coconut flour
  • 1/4 cup granulated stevia, or erythritol 
  • 2 tbsp cocoa powder
  • 55g plain nonfat Greek yogurt
  • 40g reduced-fat cream cheese
  • 2 tbsp unsweetened almond milk or cow milk
  • 1 tsp vanilla extract
  • 2 tsp red food coloring
  • 1 packet of white chocolate chips

Method:

  1. In a food processor, combine protein powder, oat flour, coconut flour, stevia, and cocoa powder. Pulse the ingredients until well blended.
  1. In a separate bowl, mix cream cheese, Greek yogurt, unsweetened almond milk, and vanilla extract. Incorporate red food coloring into the mixture until evenly distributed.
  1. Pour the wet ingredients into the food processor and blend until a thick dough forms. Shape the dough into 10 balls.
  1. Melt white chocolate chips over medium heat, stirring occasionally to prevent burning.
  1. Dip one side of each protein ball into the melted white chocolate.  Place the coated truffles on parchment paper. Repeat for the remaining truffles.
  1. Allow the truffles to set in the fridge for about 30 minutes until the chocolate coating hardens.
